How to Store Cannabis Properly — and Why Water Activity Matters

Storage is where a good batch quietly becomes a bad one. The four variables that matter, and the difference between moisture content and water activity.

A batch that passed every analysis on the day it was tested can be a problem three months later. Nothing about the certificate changes — the product does.

Storage is the least discussed and most consequential thing that happens to cannabis after it leaves the laboratory, and knowing how to store cannabis properly comes down to four variables.

Moisture: the One That Matters Most

Too dry and the material becomes brittle, terpenes are lost, and the smoke is harsh. Too wet and mould grows.

The target range for cured flower is generally 55–62% relative humidity in the storage container. Two-way humidity control packs hold that range by absorbing or releasing moisture as conditions change, which is why they are standard in commercial packaging.

Moisture content is not water activity

These two measurements get used interchangeably and they are not the same thing.

Moisture content is how much water is present, as a percentage of weight.

Water activity is how much of that water is chemically available — free rather than bound to the material.

Availability, not quantity, is what determines whether microorganisms can grow. Below roughly 0.65 aw, most moulds cannot establish. Above it, they can, and the risk rises quickly.

Two batches with identical moisture content can have different water activity depending on how the water is bound. That is why water activity testing is a better predictor of shelf stability than moisture content, and why it is on the compliance panel in most markets.

For producers, water activity is the single most useful early-warning measurement available. A batch that passes microbial screening with water activity near the upper limit is a batch that may fail later in storage. Light

Ultraviolet light degrades cannabinoids. THC oxidises to CBN under light exposure, which reduces potency and changes the profile.

Store in opaque containers, or in glass kept in a dark place. Clear jars on a shelf look appealing and are actively harmful to the contents.

Temperature

Heat accelerates every degradation process: cannabinoid oxidation, terpene evaporation, and — combined with moisture — microbial growth.

Cool and stable is the goal. Room temperature away from heat sources works. What matters as much as the absolute temperature is stability, because fluctuation drives condensation inside containers, and condensation raises water activity exactly where you do not want it.

Refrigeration is generally a poor idea for flower. The temperature swings each time the container comes out cause condensation, and the humidity in a domestic fridge is wrong. Freezing preserves cannabinoids well but makes trichomes brittle, so material handled while frozen loses resin.

Air

Oxygen drives oxidation. An airtight container limits the available oxygen and, just as importantly, limits humidity exchange with the room.

Glass jars with sealing lids are the standard for a reason: they are airtight, non-reactive and do not off-gas. Plastic bags are poor — they are not airtight, they build static that strips trichomes, and some plastics interact with terpenes.

Vacuum sealing is effective for long-term storage of material that will not be opened repeatedly, though it can compress flower.

Ventilation Around Storage

Containers control the immediate environment. The room matters too.

For anyone storing quantity — growers, processors, or patients cultivating at home — a storage area with stagnant humid air is a mould problem waiting to happen. Air movement prevents damp pockets forming, and controlled ventilation keeps ambient humidity stable so containers are not fighting the room.

This applies equally to drying and curing spaces, where most microbial problems actually originate. Different Products, Different Rules

Concentrates are more temperature-sensitive than flower. Many need refrigeration to hold consistency, and some separate at room temperature. Follow the producer’s guidance — it is usually specific to the formulation.

Edibles follow food rules first. Anything perishable stays perishable regardless of what is infused into it, and cannabinoids degrade alongside everything else.

Tinctures and oils keep well in cool, dark conditions in the original container. Ultraviolet exposure is the main threat.

Vape cartridges should be stored upright to limit leakage, and kept out of heat.

How Long It Actually Lasts

Well-stored cured flower holds up reasonably for six months to a year. Cannabinoids degrade slowly; terpenes go first, which is why old flower smells flat before it tests noticeably weaker.

Badly stored flower can deteriorate in weeks. Warm, bright, humid conditions are the worst combination — and mould can develop without being obviously visible.

If material smells of ammonia, looks or feels damp, shows any white or grey growth, or smells musty, do not use it. A batch that was safe when tested is not necessarily safe now, which is one of the limits discussed in the limits of current testing methods.

  • Airtight glass, opaque or kept dark
  • Humidity control packs holding 55–62% RH
  • Cool and stable — avoid fluctuation more than any particular temperature
  • No fridge for flower, no plastic bags
  • Ventilated storage area, especially at volume
  • Buy quantities you will use within a few months

A certificate describes a sample on a date. Everything after that is storage.
